SLOW COOKER CHICKEN TIKKA MASALA  

Serves 4

Cook Time: 4 hours (high) or 8 hours (low)

Ingredients:

  • 1 brown onion, diced

  • 1 tablespoon ginger, chopped

  • 1 tablespoon garlic, chopped

  • 700g chicken thighs, chopped in 4cm pieces

  • 1 tablespoon ground coriander

  • 1 tablespoon ground turmeric

  • 1 tablespoon garam masala

  • 2 tablespoons tomato paste

  • 400g tinned crushed tomatoes

  • 3 tablespoons tikka masala paste

  • 2 cups frozen cut green beans

  • 2-3 tablespoons Greek yoghurt

Serve on brown or white rice  

Method:

1. To the slow cooker: add onions, ginger, garlic, chicken, ground coriander, ground turmeric, garam masala, tomato paste, crushed tomatoes and tikka masala paste. Give it all a good stir to coat the chicken.
2. Set your slow cooker to low and let it work its magic for about 6-8 hours. Alternatively cook on high for 4 hours.
3. Just before serving, add the green beans and swirl in a couple of spoonfuls of Greek yogurt. Serve on brown or white rice.
