Ingredients
- 2 tablespoons olive oil extra virgin
- 500 g chicken breasts diced
- 4-5 cloves garlic chopped
- 3/4 cup sun-dried tomatoes
- 2 teaspoons Italian seasoning
- 2 teaspoons paprika
- 1 cup risoni
- 2.5 cups chicken stock
- 3/4 cup thickened cream
- 3 cups baby spinach
- 3/4 cup parmesan cheese grated
- sea salt
- cracked black pepper
Instructions
- Heat olive oil in a large frying pan over medium-high heat.
- Add diced chicken breast and cook until browned on all sides, about 5-7 minutes.
- Stir in chopped garlic, sun-dried tomatoes, Italian seasoning, and paprika. Cook for another 2 minutes until fragrant.
- Add risoni to the pot and stir to combine with the chicken and spices.
- Pour in chicken broth/stock and bring to a simmer. Reduce heat to medium-low and cover the pot. Let it cook for about 8-10 minutes until the risoni is tender and has absorbed most of the liquid.
- Stir in cream, baby spinach, and grated parmesan cheese. Cook for an additional 2-3 minutes until the spinach has wilted and the sauce has thickened slightly.
- Season with salt and pepper to taste.
- Serve hot, garnished with additional parmesan cheese if desired.
