Marry Me Chicken

Ingredients
 
 

  • 2 tablespoons extra virgin olive oil
  • 500 g chicken breasts diced
  • 4–5 cloves garlic chopped
  • 3/4 cup sun-dried tomatoes
  • 2 teaspoons italian seasoning dried
  • 2 teaspoons paprika
  • 1 cup risoni orzo pasta
  • 2 1/2 cups chicken stock
  • 3/4 cup thickened cream
  • 3 cups baby spinach
  • 3/4 cup parmesan cheese grated, plus extra to serve
  • sea salt & cracked black pepper

Instructions
 

  • Heat the olive oil in a large frying pan over medium–high heat. Add the chicken breast and cook until browned on all sides, about 5–7 minutes.
  • Stir in the garlic, sun-dried tomatoes, italian seasoning and paprika. Cook for another 2 minutes until fragrant.
  • Add the risoni to the pan and stir to combine with the chicken and spices.
  • Pour in the chicken stock and bring to a simmer. Reduce the heat to medium–low and cover the pan. Cook for about 8–10 minutes until the risoni is tender and has absorbed most of the liquid.
  • Stir in the cream, spinach and grated parmesan. Cook for an additional 2–3 minutes until the spinach has wilted and the sauce has thickened slightly.
  • Season with salt and pepper to taste. Serve hot, garnished with additional parmesan cheese if desired.
