SIX INGREDIENT TUNA MIX

This honestly took me 10 mins to throw together. I had all ingredients in my fridge or pantry, so it’s really easy with no fuss!!!

Serves 2

Ingredients:

  • 370g canned tuna, drained

  • 3 celery ribs, finely diced

  • 1/2 Spanish onion, finely diced

  • 125g canned corn, drained

  • 1/2 cup parsley, finely chopped

  • 2 tbsp Greek/natural yoghurt

  • 1 tbsp sweet chilli sauce

  • Salt and pepper

  • Red chilli flakes (optional)

  • Rocket (optional)

  • Serve on sourdough (optional)

Method:

  1. For the dressing: mix the yoghurt and the sweet chilli sauce together. Adjust to taste.

  2. For the mix: Add tuna, celery, Spanish onion, corn and parsley to a bowl. Mix in the yoghurt dressing and season well. The mix is done.

  3. Feel free to add chilli flakes and rocket.

Serve it on any of the following:

  • On its own

  • As a dip with crackers

  • On corn thins

  • On sourdough

  • In a wrap or sandwich
