Quinoa, Crispy Veggie & Pistachio Salad/ Lemon Chia Dressing
The ultimate feel good salad. Full of nutritional goodies and packed with texture & flavour. This salad won’t disappoint, especially if you’re really in need of some wholesome foods
Ingredients
- 1 cup spinach chopped
- 1 cup quinoa cooked
- 1 yellow capsicum small, diced
- 1 lebanese cucumber small, cut into half moons
- 1 cup cherry tomatoes halved
- 1/3 cup dates chopped
- 1/2 red onion small, finely diced
- 1/3 cup pistachios finely chopped
- 1/2 cup mint chopped
- 1 tablespoon chia seeds optional
- sea salt
- cracked black pepper
Dressing:
- 1/3 cup olive oil extra virgin
- 1/2 lemon juiced
- 1 teaspoon dijon mustard
- 1 tablespoon honey
- 1 tablespoon chia seeds
Instructions
Method:
- To a large bowl: Add spinach, quinoa, capsicum, cucumber, cherry tomatoes, dates, Spanish onion, pistachios, mint and chia seeds (optional). Toss together. Season well.
- For the dressing, mix together all ingredients in a small jug/bowl. Whisk well and pour over the salad. Toss gently.
