Quinoa, Crispy Veggie & Pistachio Salad With Lemon Chia Dressing
The ultimate feel good salad. Full of nutritional goodies and packed with texture and flavour. This salad won’t disappoint, especially if you’re really in need of some wholesome foods.
Ingredients
- 1 cup spinach chopped
- 1 cup quinoa cooked
- 1 yellow capsicum small, diced
- 1 lebanese cucumber small, cut into half moons
- 1 cup cherry tomatoes halved
- 1/3 cup dates chopped
- 1/2 red onion small, finely diced
- 1/3 cup pistachios finely chopped
- 1/2 cup mint leaves chopped
- 1 tablespoon chia seeds optional
- sea salt & cracked black pepper
Dressing
- 1/3 cup extra virgin olive oil
- 1/2 lemon juice squeezed
- 1 teaspoon dijon mustard
- 1 tablespoon honey
- 1 tablespoon chia seeds
Instructions
- To a large bowl, add the spinach, quinoa, capsicum, cucumber, cherry tomatoes, dates, onion, pistachios, mint and chia seeds (if using). Season well and toss together.
- For the dressing: Mix all the ingredients in a small jug or bowl. Whisk well and pour over the salad. Toss gently.
