QUINOA, CRISPY VEGGIE & PISTACHIO SALAD/ LEMON CHIA DRESSING
The ultimate feel good salad. Full of nutritional goodies and packed with texture & flavour. This salad won’t disappoint, especially if you’re really in need of some wholesome foods
Serves 3
Ingredients:
1 cup baby spinach, chopped
1 cup quinoa, cooked
1 small yellow capsicum, diced
1 small Lebanese cucumber, cut into half moons
1 cup cherry tomatoes, halved
1/3 cup dates, chopped
1/2 small Spanish onion, finely diced
1/3 cup pistachios, finely chopped
1/2 cup mint, chopped
1 tbsp chia seeds (optional)
Sea salt flakes
Black pepper
Dressing:
1/3 cup extra virgin olive oil
1/2 lemon, juiced
1 tsp Dijon mustard
1 tbsp honey
1 tbsp chia seeds
Method:
To a large bowl: Add spinach, quinoa, capsicum, cucumber, cherry tomatoes, dates, Spanish onion, pistachios, mint and chia seeds (optional). Toss together. Season well.
For the dressing, mix together all ingredients in a small jug/bowl. Whisk well and pour over the salad. Toss gently.
