Quinoa, Crispy Veggie & Pistachio Salad/ Lemon Chia Dressing

The ultimate feel good salad. Full of nutritional goodies and packed with texture & flavour. This salad won’t disappoint, especially if you’re really in need of some wholesome foods

Ingredients
 
 

  • 1 cup spinach chopped
  • 1 cup quinoa cooked
  • 1 yellow capsicum small, diced
  • 1 lebanese cucumber small, cut into half moons
  • 1 cup cherry tomatoes halved
  • 1/3 cup dates chopped
  • 1/2 red onion small, finely diced
  • 1/3 cup pistachios finely chopped
  • 1/2 cup mint chopped
  • 1 tablespoon chia seeds optional
  • sea salt
  • cracked black pepper

Dressing:

  • 1/3 cup olive oil extra virgin
  • 1/2 lemon juiced
  • 1 teaspoon dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon chia seeds

Instructions
 

Method:

  • To a large bowl: Add spinach, quinoa, capsicum, cucumber, cherry tomatoes, dates, Spanish onion, pistachios, mint and chia seeds (optional). Toss together. Season well.
  • For the dressing, mix together all ingredients in a small jug/bowl. Whisk well and pour over the salad. Toss gently.
