Ingredients
- 1 cup baby spinach chopped
- 1 cup quinoa cooked
- 1 yellow capsicum small, diced
- 1 lebanese cucumber small, cut into half moons
- 1 cup cherry tomatoes halved
- 1/3 cup dates chopped
- 1/2 red onion small, finely diced
- 1/3 cup pistachios finely chopped
- 1/2 cup mint leaves chopped
- 1 tablespoon chia seeds optional
- sea salt & cracked black pepper
- 1/3 cup extra virgin olive oil
- 1/2 lemon juice squeezed
- 1 teaspoon dijon mustard
- 1 tablespoon honey
- 1 tablespoon chia seeds
Instructions
- To a large bowl, add the spinach, quinoa, yellow capsicum, lebanese cucumber, cherry tomatoes, dates, red onion, pistachios, mint leaves and chia seeds (if using).
