QUINOA, CRISPY VEGGIE & PISTACHIO SALAD/ LEMON CHIA DRESSING

The ultimate feel good salad. Full of nutritional goodies and packed with texture & flavour. This salad won’t disappoint, especially if you’re really in need of some wholesome foods

Serves 3

Ingredients:

  • 1 cup baby spinach, chopped

  • 1 cup quinoa, cooked

  • 1 small yellow capsicum, diced

  • 1 small Lebanese cucumber, cut into half moons

  • 1 cup cherry tomatoes, halved

  • 1/3 cup dates, chopped

  • 1/2 small Spanish onion, finely diced

  • 1/3 cup pistachios, finely chopped

  • 1/2 cup mint, chopped

  • 1 tbsp chia seeds (optional)

  • Sea salt flakes

  • Black pepper

    Dressing:

  • 1/3 cup extra virgin olive oil

  • 1/2 lemon, juiced

  • 1 tsp Dijon mustard

  • 1 tbsp honey

  • 1 tbsp chia seeds

Method:

  1. To a large bowl: Add spinach, quinoa, capsicum, cucumber, cherry tomatoes, dates, Spanish onion, pistachios, mint and chia seeds (optional). Toss together. Season well.

  2. For the dressing, mix together all ingredients in a small jug/bowl. Whisk well and pour over the salad. Toss gently.
