Quinoa, Crispy Veggie & Pistachio Salad With Lemon Chia Dressing
The ultimate feel good salad. Full of nutritional goodies and packed with texture and flavour. This salad won’t disappoint, especially if you’re really in need of some wholesome foods.
To a large bowl, add the spinach, quinoa, yellow capsicum, lebanese cucumber, cherry tomatoes, dates, red onion, pistachios, mint leaves and chia seeds (if using). Season well and toss together.
1 cup baby spinach, 1 cup quinoa, 1 yellow capsicum, 1 lebanese cucumber, 1 cup cherry tomatoes, 1/3 cup dates, 1/2 red onion, 1/3 cup pistachios, 1/2 cup mint leaves, 1 tablespoon chia seeds
For the dressing: Mix all the ingredients in a small jug or bowl. Whisk well and pour over the salad. Toss gently.
