10 Minute Chickpea, Tuna & Goats Cheese Salad

Ingredients
 
 

  • 1 cup spinach chopped
  • 400 g canned chickpeas drained and rinsed
  • 1 lebanese cucumber small, deseeded & cut into half moon
  • 1/2 red onion small, finely diced
  • 2 tablespoon dill chopped
  • 70 g goats cheese or feta
  • 180 g canned tuna drained (optional)
  • 1 tablespoon olive oil extra virgin
  • 1/2 lemon juice squeezed

Instructions
 

Method:

  • In a medium-sized bowl add spinach, chickpeas, cucumber, Spanish onion, dill, goat’s cheese (or feta) and tuna. Drizzle over the olive oil and squeeze in the lemon juice. Toss the salad together. Season well with sea salt & black pepper.
