10 MINUTE CHICKPEA, TUNA & GOATS CHEESE SALAD

Serves 2

Ingredients:

  • 1 cup spinach, chopped

  • 400g canned chickpeas, drained and rinsed

  • 1 small cucumber, deseeded & cut into half moon

  • 1/2 small red onion, finely diced

  • 2 tbsp dill, chopped

  • 70g goats cheese (or feta)

  • 180g can tuna, drained (optional)

  • 1 tbsp extra virgin olive oil

  • 1/2 lemon, juice squeezed

Method:

  1. In a medium-sized bowl add spinach, chickpeas, cucumber, Spanish onion, dill, goat’s cheese (or feta) and tuna. Drizzle over the olive oil and squeeze in the lemon juice. Toss the salad together. Season well with sea salt & black pepper.
