10-Minute Chickpea, Tuna & Goat's Cheese Salad

Ingredients
  

  • 1 cup baby spinach chopped
  • 400 g canned chickpeas drained & rinsed
  • 1 lebanese cucumber small, deseeded & cut into half moons
  • 1/2 red onion small, finely diced
  • 2 tablespoons dill chopped
  • 70 g goat's cheese or feta
  • 180 g canned tuna drained (optional)
  • 1 tablespoon extra virgin olive oil
  • 1/2 lemon juice squeezed
  • sea salt & cracked black pepper

Instructions
 

  • In a medium bowl, combine the spinach, chickpeas, cucumber, onion, dill, goat’s cheese and tuna (if using).
    1 cup baby spinach, 400 g canned chickpeas, 1 lebanese cucumber, 1/2 red onion, 2 tablespoons dill, 70 g goat's cheese, 180 g canned tuna
  • Drizzle over the olive oil and squeeze in the lemon juice. Toss the salad together. Season well and serve.
    1 tablespoon extra virgin olive oil, 1/2 lemon, sea salt & cracked black pepper
