10-Minute Chickpea, Tuna & Goat's Cheese Salad

- 1 cup baby spinach chopped
- 400 g canned chickpeas drained & rinsed
- 1 lebanese cucumber small, deseeded & cut into half moons
- 1/2 red onion small, finely diced
- 2 tablespoons dill chopped
- 70 g goat's cheese or feta
- 180 g canned tuna drained (optional)
- 1 tablespoon extra virgin olive oil
- 1/2 lemon juice squeezed
- sea salt & cracked black pepper
In a medium bowl, combine the spinach, chickpeas, cucumber, onion, dill, goat’s cheese and tuna (if using).
1 cup baby spinach, 400 g canned chickpeas, 1 lebanese cucumber, 1/2 red onion, 2 tablespoons dill, 70 g goat's cheese, 180 g canned tuna
Drizzle over the olive oil and squeeze in the lemon juice. Toss the salad together. Season well and serve.
