Kale, Lentil & Apple Salad

Easy, quick, healthy and delicious. This is a great one to throw together during the week when you want a fresh and easy lunch. It also works well at dinner served alongside meat.

Ingredients
 
 

  • 2 cups kale chopped (or spinach)
  • 3 tablespoons extra virgin olive oil
  • 400 g canned lentils drained & rinsed
  • 1 red capsicum small, finely diced
  • 1 lebanese cucumber small, finely diced
  • 1 cup cherry tomatoes halved or quartered
  • 1/2 cup dill chopped
  • 1/2 red onion finely diced
  • 50 g feta cheese crumbled
  • 1 pink lady apple small, finely diced or julienned
  • 1 lemon juice squeezed
  • 1 teaspoon sea salt
  • 1 teaspoon cracked black pepper

Instructions
 

  • Place the kale in a large bowl, add 1 tablespoon of the olive oil and massage the oil into the kale leaves with your fingers.
    2 cups kale, 3 tablespoons extra virgin olive oil
  • Add the lentils, red capsicum, cucumber, cherry tomatoes, dill, red onion, feta and apple. Toss the salad together. Add the remaining olive oil, lemon juice, salt and pepper. Toss together and serve.
