Kale, Lentil & Apple Salad
Easy, quick, healthy and delicious. This is a great one to throw together during the week when you want a fresh and easy salad. It also works well at dinner served alongside meats.
Ingredients
- 2 cups kale chopped (or spinach)
- 1 tablespoon olive oil extra virgin
- 400 g canned lentils drained and rinsed
- 1 red capsicum small, finely diced
- 1 lebanese cucumber small, finely diced
- 1 cup cherry tomatoes halved or quartered
- 1/2 cup dill chopped
- 1/2 red onion finely diced
- 50 g feta cheese crumbled
- 1 pink lady apple small, finely diced or julienned
- 2 tablespoons olive oil extra virgin
- 1 lemon juice squeezed
- 1 teaspoon sea salt
- 1 teaspoon cracked black pepper
Instructions
Method:
- Place the kale into a large salad bowl, add 1 tablespoon of extra virgin olive oil and massage the oil into the kale leaves with your fingers. Add the lentils, red capsicum, cucumber, cherry tomatoes, dill, red onion, feta and apple. Toss the salad together. Add the extra virgin olive oil, lemon juice, sea salt and pepper. Toss together.
