KALE, LENTIL & APPLE SALAD
Easy, quick, healthy and delicious. This is a great one to throw together during the week when you want a fresh and easy salad. It also works well at dinner served alongside meats.
Serves 2
Ingredients:
2 cups kale, chopped (or spinach)
1 tablespoon extra virgin olive oil
400g canned lentils, drained and rinsed
1 small red capsicum, finely diced
1 small lebanese cucumber, finely diced
1 cup cherry tomatoes, halved or quartered
1/2 cup dill, chopped
1/2 red onion, finely diced
50g feta cheese, crumbled
1 small pink lady apple, finely diced or julienned
2 tablespoons extra virgin olive oil
1 lemon, juice squeezed
1 teaspoon sea salt flakes
1 teaspoon cracked black pepper
Method:
Place the kale into a large salad bowl, add 1 tablespoon of extra virgin olive oil and massage the oil into the kale leaves with your fingers. Add the lentils, red capsicum, cucumber, cherry tomatoes, dill, red onion, feta and apple. Toss the salad together. Add the extra virgin olive oil, lemon juice, sea salt and pepper. Toss together.
