KALE, CRAISIN & GOATS CHEESE SALAD

The perfect salad to serve when you’re next entertaining.

It’s quick and easy to put together, but the flavours and textures are incredible!!!

So much more exciting than a boring green side salad!!

Serves 4 (6 as a side)

Ingredients:

  • 1 bunch kale, curly or dinosaur, stemmed and roughly chopped

  • 1 tsp extra virgin olive oil

  • 1 tbsp lemon juice

  • Pinch sea salt

  • 1 large apple, cored & chopped (I used royal gala)

  • 1 large avocado, pitted & chopped

  • 1/2 cup @oceansprayanz craisins

  • 1/2 cup toasted almonds, chopped

  • 80g goats cheese, crumbled

    Dressing:

  • 1/4 cup extra virgin olive oil

  • 2 tbsp apple cider vinegar

  • 1 tbsp lemon juice

  • 2 tsp Canadian maple syrup

  • 1 tsp Dijon mustard

  • Sea salt

  • Black pepper

Method:

  1. For the dressing: Place all ingredients into a small jug/bow and mix well to combine. Season well.

  2. In a large bowl, add the kale, olive oil, lemon juice and sea salt. Get your hands in there and massage the kale until it softens about 2-3 minutes. Then add the chopped apple, craisins, toasted almonds, avocado & goat’s cheese. Drizzle over the maple dressing and gently toss the salad together. Season a little more if you wish.
