Kale, Cranberry & Goat’s Cheese Salad

The perfect salad to serve when you’re next entertaining. It’s quick and easy to put together, but the flavours and textures are incredible. So much more exciting than a boring green side salad!

Ingredients
  

  • 1 bunch kale curly or dinosaur, stems removed, leaves roughly chopped
  • 1 teaspoon extra virgin olive oil
  • 1 tablespoon lemon juice
  • pinch sea salt
  • 1 apple large, cored & chopped (I used royal gala)
  • 1/2 cup dried cranberries
  • 1/2 cup almonds toasted, chopped
  • 1 avocado large, pitted & chopped
  • 80 g goats cheese crumbled
  • cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • 2 teaspoons maple syrup
  • 1 teaspoon dijon mustard
  • sea salt & cracked black pepper

Instructions
 

  • For the dressing: Place all the ingredients in a small jug or bowl and mix well to combine. Season well.
  • In a large bowl, place the kale, olive oil, lemon juice and sea salt. Get your hands in there and massage the kale until it softens, about 2–3 minutes. Then add the apple, cranberries, almonds, avocado and goat’s cheese. Drizzle over the dressing and gently toss the salad together. Season a little more if you wish.
