The perfect salad to serve when you’re next entertaining. It’s quick and easy to put together, but the flavours and textures are incredible. So much more exciting than a boring green side salad!
1bunchkalecurly or dinosaur, stems removed, leaves roughly chopped
1teaspoonextra virgin olive oil
1tablespoonlemon juice
pinchsea salt
1applelarge, cored & chopped (I used royal gala)
1/2cupdried cranberries
1/2cupalmondstoasted, chopped
1avocadolarge, pitted & chopped
80ggoat’s cheesecrumbled
cupextra virgin olive oil
2tablespoonsapple cider vinegar
1tablespoonlemon juice
2teaspoonsmaple syrup
1teaspoondijon mustard
sea salt & cracked black pepper
Instructions
For the dressing: Place all the ingredients in a small jug or bowl and mix well to combine. Season well.
In a large bowl, place the kale, olive oil, lemon juice and sea salt. Get your hands in there and massage the kale until it softens, about 2–3 minutes. Then add the apple, cranberries, almonds, avocado and goat’s cheese. Drizzle over the dressing and gently toss the salad together. Season a little more if you wish.
