Healthy & Easy Lamb Burgers With Minted Yoghurt

Ingredients
- 1 tablespoon olive oil
- 500 g lamb mince good quality
- 1 brown onion small, finely diced
- 2 cloves garlic finely diced or grated
- 1 teaspoon dried cumin
- 1 teaspoon coriander powder
- 1 teaspoon Moroccan spice blend optional
- 1/2 teaspoon cinnamon
- 2 tablespoon parsley finely chopped
- 1 egg
- 4 burger buns
- 1 jarred roasted capsicum drained and cut into strips
- 1 cup rocket leaves to serve
Minted yoghurt:
- 1 cup greek yoghurt
- 1 lebanese cucumber finely diced
- 2 tablespoons mint finely chopped
Instructions
Method:
- Place the lamb, onion, garlic, spices, parsley, egg and some salt and pepper in a bowl. Mix with your hands until well combined, then form into four patties. Chill for 30 minutes.
- For the minted yoghurt, combine yoghurt, cucumber chopped mint. Season, then chill until serving.
- Preheat a frying pan or barbecue to medium-high. Cook patties for 3-4 minutes each side until cooked through. Toast buns, spread with minted yoghurt and fill with roast capsicum, lamb patties and rocket.
