HEALTHY & EASY LAMB BURGERS WITH MINTED YOGHURT

Serves 4

Cook time: 10 mins

Ingredients:

  • 1 tablespoons olive oil

  • 500 grams of good quality lamb mince

  • 1 small brown onion, finely diced

  • 2 cloves of garlic, finely diced or grated

  • 1 teaspoon of cumin powder

  • 1 teaspoon of coriander powder

  • 1 teaspoon of Moroccan seasoning (optional)

  • 1/2 teaspoon of cinnamon

  • 2 tablespoons parsley, finely chopped

  • 1 egg

  •  4 burger buns

  • 1 jar of roasted capsicums, drained and cut into strips

  • 1 cup of rocket (to serve)

Minted yoghurt:

  • 1 cup of Greek yoghurt

  • 1 lebanese cucumber, finely diced

  • 2 tablespoons of mint, finely chopped

Method:

  1. Place the lamb, onion, garlic, spices, parsley, egg and some salt and pepper in a bowl. Mix with your hands until well combined, then form into four patties. Chill for 30 minutes.

  2. For the minted yoghurt, combine yoghurt, cucumber chopped mint. Season, then chill until serving.

  3. Preheat a frying pan or barbecue to medium-high. Cook patties for 3-4 minutes each side until cooked through. Toast buns, spread with minted yoghurt and fill with roast capsicum, lamb patties and rocket.
