Peanut Chicken Lettuce Wraps

Ingredients
 
 

  • 1 tablespoon extra virgin olive oil
  • 500 g chicken mince
  • 3 cloves garlic finely sliced
  • 3 cm ginger piece finely chopped
  • 1/2 cup salted roasted peanuts chopped
  • 3 spring onions finely chopped

Sauce

  • 1/4 cup soy sauce
  • 1/2 cup crunchy peanut butter
  • 1 tablespoon brown sugar
  • 1 lime juice squeezed
  • 1/4 cup water
  • 1 red chilli finely chopped

To Serve

  • lettuce cups
  • coriander leaves
  • lime wedges

Instructions
 

  • Heat the olive oil in a large frying pan over medium heat. Add the chicken mince and cook, breaking it up with a spatula, until browned and cooked through, about 5 minutes. Add the garlic and ginger and cook for another 2 minutes until fragrant.
  • For the sauce: Whisk all the ingredients together in a small bowl.
  • Pour the sauce over the chicken mixture in the pan and stir to combine. Cook for another 2–3 minutes until everything is heated through and well coated.
  • Stir in the chopped peanuts and spring onion, reserving some for garnish if desired.
  • To serve, spoon the peanut chicken mixture into lettuce cups. Garnish with the reserved peanuts and spring onion, coriander leaves and lime wedges.
