Peanut Chicken Lettuce Wraps

Ingredients
- 1 tablespoon olive oil extra virgin
- 500 g chicken mince
- 3 cloves garlic finely sliced
- 3 cm knob ginger finely chopped
- 1/2 cup salted roasted peanuts chopped
- 3 spring onions finely chopped
Sauce:
- 1/4 cup soy sauce
- 1/2 cup crunchy peanut butter
- 1 tablespoon brown sugar
- 1 lime juiced
- 1/4 cup water
- 1 red chilli finely chopped
For serving:
- lettuce cups
- coriander and lime
Instructions
- Heat the olive oil in a large frying pan over medium heat. Add the chicken mince to the pan and cook, breaking it up with a spatula, until it’s browned and cooked through, about 5 minutes. Add the garlic and ginger to the pan and cook for another 2 minutes until fragrant.
- In a small bowl, whisk together the soy sauce, peanut butter, brown sugar, lime juice, water, and chopped red chili to make the sauce.
- Pour the sauce over the chicken mixture in the pan and stir to combine. Cook for another 2-3 minutes until everything is heated through and well coated in the sauce.
- Stir in the chopped peanuts and spring onions, reserving some for garnish if desired.
- To serve, spoon the peanut chicken mixture into lettuce cups. Garnish with additional chopped peanuts, spring onions, fresh coriander, and lime wedges.
