Peanut Chicken Lettuce Wraps

Ingredients
 
 

  • 1 tablespoon olive oil extra virgin
  • 500 g chicken mince
  • 3 cloves garlic finely sliced
  • 3 cm knob ginger finely chopped
  • 1/2 cup salted roasted peanuts chopped
  • 3 spring onions finely chopped

Sauce:

  • 1/4 cup soy sauce
  • 1/2 cup crunchy peanut butter
  • 1 tablespoon brown sugar
  • 1 lime juiced
  • 1/4 cup water
  • 1 red chilli finely chopped

For serving:

  • lettuce cups
  • coriander and lime

Instructions
 

  • Heat the olive oil in a large frying pan over medium heat. Add the chicken mince to the pan and cook, breaking it up with a spatula, until it’s browned and cooked through, about 5 minutes. Add the garlic and ginger to the pan and cook for another 2 minutes until fragrant.
  • In a small bowl, whisk together the soy sauce, peanut butter, brown sugar, lime juice, water, and chopped red chili to make the sauce.
  • Pour the sauce over the chicken mixture in the pan and stir to combine. Cook for another 2-3 minutes until everything is heated through and well coated in the sauce.
  • Stir in the chopped peanuts and spring onions, reserving some for garnish if desired.
  • To serve, spoon the peanut chicken mixture into lettuce cups. Garnish with additional chopped peanuts, spring onions, fresh coriander, and lime wedges.
