Healthy & Easy Lamb Burgers With Minted Yoghurt

Ingredients
  

  • 500 g lamb mince good quality
  • 1 brown onion small, finely diced
  • 2 cloves garlic finely chopped or grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon moroccan spice blend optional
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoon parsley leaves finely chopped
  • 1 egg
  • sea salt & cracked black pepper
  • 1 tablespoon extra virgin olive oil
  • 4 burger buns
  • 1 jarred roasted capsicum drained & cut into strips
  • 1 cup rocket leaves to serve
  • 1 cup greek yoghurt
  • 1 lebanese cucumber finely diced
  • 2 tablespoons mint leaves finely chopped

Instructions
 

  • Place the lamb, onion, garlic, spices, parsley, egg and some salt and pepper in a bowl. Mix with your hands until well combined, then form into four patties. Chill for 30 minutes.

  • For the minted yoghurt: Combine all the ingredients in a bowl. Season, then chill until serving.
    1 cup greek yoghurt, 1 lebanese cucumber, 2 tablespoons mint leaves
  • Preheat a frying pan or barbecue to medium–high. Cook the patties for 3–4 minutes each side until cooked through.
    500 g lamb mince
  • Toast the buns, spread with minted yoghurt and fill with the lamb patties, roast capsicum and rocket.
    4 burger buns, 1 jarred roasted capsicum, 1 cup rocket leaves
