Ingredients
- 400 g canned four bean mix drained & rinsed
- 1 Lebanese cucumber finely diced
- 1 red capsicum medium, finely diced
- 1 red onion small, finely diced
- 1 avocado finely diced
- 1/2 cup coriander chopped
Dressing (staples):
- 1/3 cup olive oil
- 1/3 cup lime juice
- sea salt
- cracked black pepper
Instructions
Method:
- To make the dressing: Mix the olive oil and lime juice together until combined. Adjust to taste.
- For the salad: combine the salad ingredients in a bowl. Mix well together and season with salt & pepper. Add the dressing.
