Four Bean Salad

Ingredients
- 400 g canned four bean mix drained & rinsed
- 1 lebanese cucumber finely diced
- 1 red capsicum medium, finely diced
- 1 red onion small, finely diced
- 1 avocado finely diced
- 1/2 cup coriander leaves chopped
Dressing
- 1/3 cup extra virgin olive oil
- 1/3 cup lime juice
- sea salt & cracked black pepper
Instructions
- For the dressing: Mix the olive oil and lime juice until combined. Season well.
- For the salad: Combine all the ingredients in a bowl. Season well, then pour over the dressing and toss gently.
