FOUR BEAN SALAD

Serves 2 (as a meal)

Prep time: 10 mins 

Ingredients:

  • 400g can four bean mix, drained & rinsed

  • 1 Lebanese cucumber, finely diced 

  • 1 medium red capsicum, finely diced 

  • 1 small red onion, finely diced

  • 1 avocado, finely diced

  • 1/2 cup coriander, chopped

 Dressing (staples): 

  • 1/3 cup of olive oil

  • 1/3 cup of lime juice

  • Salt & pepper

 Method:

  1. To make the dressing: Mix the olive oil and lime juice together until combined. Adjust to taste.

  2. For the salad: combine the salad ingredients in a bowl. Mix well together and season with salt & pepper. Add the dressing.
