Ingredients
 
 

  • 400 g canned four bean mix drained & rinsed
  • 1 lebanese cucumber finely diced
  • 1 red capsicum medium, finely diced
  • 1 red onion small, finely diced
  • 1 avocado finely diced
  • 1/2 cup coriander leaves chopped

Dressing

  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lime juice
  • sea salt & cracked black pepper

Instructions
 

  • For the dressing: Mix the olive oil and lime juice until combined. Season well.
  • For the salad: Combine all the ingredients in a bowl. Season well, then pour over the dressing and toss gently.
