Four Bean Salad

- 400 g canned four bean mix drained & rinsed
- 1 lebanese cucumber finely diced
- 1 red capsicum medium, finely diced
- 1 red onion small, finely diced
- 1 avocado finely diced
- 1/2 cup coriander leaves chopped
- 2 tablespoons extra virgin olive oil
- 2 tablespoons lime juice
- sea salt & cracked black pepper
For the dressing: Mix the olive oil and lime juice until combined. Season well.
2 tablespoons extra virgin olive oil, 2 tablespoons lime juice
For the salad: Combine all the ingredients in a bowl. Season well, then pour over the dressing and toss gently.
