Ingredients
  

  • 400 ml coconut cream
  • 1 tablespoon red curry paste
  • 2 cloves garlic finely chopped
  • 1/2 teaspoon ginger ground
  • 1 teaspoon lemongrass paste
  • 1 tablespoon soy sauce
  • 2 tablespoons peanut butter
  • 1 tablespoon oyster sauce
  • 2 cups bok choy roughly chopped
  • 3 spring onions chopped
  • 1 packet frozen dumplings

To serve:

  • 2 spring onions finely sliced
  • 1 teaspoon sesame seeds
  • Chilli oil

Instructions
 

  • Preheat oven to 180°C fan-forced.
  • In an oven-safe baking dish, add the coconut cream, red curry paste, garlic, ginger, lemongrass, soy sauce, peanut butter and oyster sauce. Whisk well until smooth and fully combined.

  • Add the chopped bok choy and spring onion, then mix to coat in the sauce.

  • Place the frozen dumplings into the dish, nestling them into the sauce.

  • Cover with foil and bake for 25-30 minutes, or until the dumplings are heated through and tender.
  • Remove from the oven and give everything a gentle stir. Top with spring onion, sesame seeds and chilli oil before serving.
