- 400 ml coconut cream
- 1 tablespoon red curry paste
- 2 cloves garlic finely chopped
- 1/2 teaspoon ginger ground
- 1 teaspoon lemongrass paste
- 1 tablespoon soy sauce
- 2 tablespoons peanut butter
- 1 tablespoon oyster sauce
- 2 cups bok choy roughly chopped
- 3 spring onions chopped
- 1 packet frozen dumplings
To serve:
- 2 spring onions finely sliced
- 1 teaspoon sesame seeds
- Chilli oil
Instructions
- Preheat oven to 180°C fan-forced.
- In an oven-safe baking dish, add the coconut cream, red curry paste, garlic, ginger, lemongrass, soy sauce, peanut butter and oyster sauce. - Cover with foil and bake for 25-30 minutes, or until the dumplings are heated through and tender.
