400 ml coconut cream 1 tablespoon red curry paste 2 cloves garlic finely chopped 1/2 teaspoon ginger ground 1 teaspoon lemongrass paste 1 tablespoon soy sauce 2 tablespoons peanut butter 1 tablespoon oyster sauce 2 cups bok choy roughly chopped 3 spring onions chopped 1 packet frozen dumplings To serve: 2 spring onions finely sliced 1 teaspoon sesame seeds Chilli oil
Preheat oven to 180°C fan-forced.
In an oven-safe baking dish, add the coconut cream, red curry paste, garlic, ginger, lemongrass, soy sauce, peanut butter and oyster sauce. Whisk well until smooth and fully combined.

Add the chopped bok choy and spring onion, then mix to coat in the sauce.

Place the frozen dumplings into the dish, nestling them into the sauce.

Cover with foil and bake for 25-30 minutes, or until the dumplings are heated through and tender.
Remove from the oven and give everything a gentle stir. Top with spring onion, sesame seeds and chilli oil before serving.
