Chicken, Tomato & Cheese Egg Quiche Tortilla
Ingredients
- 1 tortilla large
- spinach chopped
- 1 tomato finely chopped
- 1/2 cup red capsicum diced
- 1/2 cup chicken cooked
- feta cheese crumbled
- 4 eggs lightly whisked
- 1/2 cup cottage cheese
- sea salt & black pepper pinch each
- 1/2 cup mozzarella cheese grated
Instructions
- Preheat the oven to 175°C (fan forced).
- Using a 20 cm shallow oven or cake tin, place the tortilla into the tin and gently push down to create a case.
- Add the spinach, tomato, capsicum, chicken and feta to the tin. Combine the eggs with the cottage cheese, salt and pepper, then pour into the tin (gently bang the tin on a surface to allow the egg to spread). Top with the grated cheese and season well.
- Bake for 30 minutes. Remove, cut and enjoy.
