CHICKEN, TOMATO & CHEESE TORTILLA EGG TORTILLA QUICHE

Serves 2

Ingredients:

  • 1 large tortilla 

  • 4 eggs, lightly whisked 

  • 1/2 cup cottage cheese 

  • Handful spinach, chopped 

  • 1/2 cup yellow or red capsicum or both, diced 

  • 1 tomato, finely chopped 

  • 1/2 cup cooked chicken 

  • Small crumble of feta cheese 

  • 1/2 cup grated cheese (tasty or Mozzarella)  

  • Pinch of salt and pepper

Method:

  1. Preheat oven to 175 degrees celsius (fan forced)


  2. Using a 20cm shallow oven/cake tin, place the tortilla into the pan and gently push down to create a case. 


  3. Add the spinach, tomato, capsicum, chicken and feta to the cake tin. Combine the eggs with cottage cheese, salt, pepper and then pour into the tin (gently bang the tin on a surface to allow the egg to spread). Top with grated cheese and season well. 


  4. Bake for 30 minutes. Remove, cut and enjoy.
