Baked Apple & Coconut Oats

If youโ€™re looking for a nourishing breakfast that feels like comfort food but still ticks all the practical boxes, these Baked Apple & Coconut Oats are a must-make. Warm, lightly spiced and naturally sweetened, this is the kind of recipe that fills your kitchen with the cosiest aroma and sets you up for the day ahead.

This baked oats recipe is perfect for busy mornings, slow weekends, or anyone who loves having breakfast prepped and ready to go. Made with rolled oats, wholemeal flour and protein powder, itโ€™s designed to keep you feeling full and energised, while still tasting like a treat. The combination of cinnamon and nutmeg brings a gentle warmth, while thinly sliced apples soften as they bake, adding natural sweetness and moisture throughout the dish.

Coconut lovers will appreciate the subtle richness from the desiccated coconut, which pairs beautifully with the apples and spices. A drizzle of maple syrup provides just enough sweetness without overpowering the flavours, making this recipe family-friendly and easy to customise. You can enjoy it warm straight from the oven, or slice it up once cooled and store it in the fridge for grab-and-go breakfasts during the week.

One of the best things about baked oats is how versatile they are. Serve a slice on its own, or dress it up with yoghurt, extra fruit, a splash of milk or a spoon of nut butter. It also works beautifully as a nourishing afternoon snack or a healthier dessert option when youโ€™re craving something sweet but satisfying.
