10 MINUTE TUNA MIX WITH CORN, DILL & MAYONNAISE

Always a go to in our household. It takes 10 minutes and only seven ingredients. You can whip it up in no time. It last about 3 days in the fridge too, so you can make a big batch and then take it to work with corn thins. So yum!!!

Serves 2

Ingredients:

  • 185g canned tuna

  • 1 lebanese cucumber, diced

  • 250g canned corn

  • 3 spring onion, finely sliced

  • 1/4 cup dill, finely chopped

  • 1 tablespoon mayonnaise

  • 2 tablespoons cottage cheese or Greek yoghurt

Method:

  1. Place all ingredients into a bowl and mix well.

You can serve on sourdough toast, rice things or add rockets leaves to make it a salad.

I also like to top mine with some sriracha or red chilli flakes.
