10-Minute Tuna Mix With Corn, Dill & Mayonnaise

Always a go-to in our household. It takes 10 minutes and uses only seven ingredients. You can whip it up in no time. It last about 3 days in the fridge too, so you can make a big batch and then take it to work with corn thins. So yum!

Ingredients
 
 

  • 185 g canned tuna
  • 1 lebanese cucumber diced
  • 250 g canned corn drained
  • 3 spring onions finely sliced
  • 1/4 cup dill finely chopped
  • 1 tablespoon mayonnaise
  • 2 tablespoons cottage cheese or greek yoghurt

Instructions
 

  • Place all the ingredients in a bowl and mix well.
  • Serve on sourdough toast or rice/corn thins. Or add rocket leaves to make it a salad. I also like to top mine with some sriracha sauce or red chilli flakes.
