Sweet Chilli Prawns With Asian Greens & Rice
A super quick and absolutely DELICIOUS dish!This recipe is really great for a midweek meal when you’re short on time, but want something easy and tasty.
Ingredients
- 10 tiger prawns raw large, peeled with or without tail
- 1 tablespoon sweet chilli sauce
- 2 cloves garlic finely chopped
- 1 tablespoon coriander roots chopped
- 1 cup snow peas trimmed and sliced lengthways
- 2 bunches bok choy washed and roughly chopped
- 3 spring onion sliced
- 2 tablespoons sweet chilli sauce
- 1 tablespoon soy sauce light
- white rice or brown rice
To serve:
- lime wedges, fresh
- coriander leaves
- shallots fried, (optional)
Instructions
Method:
- Start by cooking 3/4 cup rice according to packet instructions.
- Place the prawns in a bowl. Add the sweet chilli sauce, garlic, and coriander roots. Stir through to marinate.
- Place a medium fry pan on medium/high heat. Add the prawns, separate them so they have room and cook for approx. 3 minutes each side. Remove and set aside.
- In the same pan, increase the heat to high and add the snow peas, add 1 tablespoon of sweet chilli sauce and stir fry for 2 minutes. Then add the boc choy, spring onion, remaining sweet chilli and light soy sauce. Stir fry for 2 mins. Turn the heat off.
- To serve: add the rice to bowls, then the stir fried greens and top with the sweet chilli prawns. Squeeze over some fresh lime juice. Top with some coriander leaves and fried shallots (optional).
