Sweet Chilli Prawns With Asian Greens & Rice
A super quick and absolutely delicious dish! This recipe is really great for a midweek meal when you’re short on time, but want something easy and tasty.
Ingredients
- 1 cup snow peas trimmed & sliced lengthways
- 2 tablespoons sweet chilli sauce
- 2 bunches bok choy roughly chopped
- 3 spring onions sliced
- 1 tablespoon soy sauce light
Sweet Chilli Prawns
- 10 tiger prawns large, raw, peeled (with or without tail)
- 1 tablespoon sweet chilli sauce
- 2 cloves garlic finely chopped
- 1 tablespoon coriander roots chopped
To Serve
- cooked rice white or brown
- lime wedges
- coriander leaves
- fried shallots optional
Instructions
- For the sweet chilli prawns: Place all the ingredients in a bowl and stir through to marinate.
- Place a medium frying pan over medium–high heat. Add the prawns, separating them so they have room, and cook for about 3 minutes each side. Remove and set aside.
- Using the same pan, increase the heat to high and add the snow peas and 1 tablespoon of the sweet chilli sauce. Stir fry for 2 minutes, then add the bok choy, spring onion, remaining sweet chilli and soy sauce. Stir fry for 2 minutes. Turn the heat off.
- To serve: Place some rice in bowls, then add the stir fried greens and sweet chilli prawns. Squeeze over some fresh lime juice. Top with coriander leaves and fried shallots if you like.
