A super quick and absolutely delicious dish! This recipe is really great for a midweek meal when you’re short on time, but want something easy and tasty.
Place a medium frying pan over medium–high heat. Add the prawns, separating them so they have room, and cook for about 3 minutes each side. Remove and set aside.

Using the same pan, increase the heat to high and add the snow peas and 1 tablespoon of the sweet chilli sauce. Stir fry for 2 minutes, then add the bok choy, spring onion, remaining sweet chilli and soy sauce. Stir fry for 2 minutes. Turn the heat off.
1 cup snow peas, 2 bunches bok choy, 3 spring onions, 2 tablespoons sweet chilli sauce, 1 tablespoon soy sauce
To serve: Place some rice in bowls, then add the stir fried greens and sweet chilli prawns. Squeeze over some fresh lime juice. Top with coriander leaves and fried shallots if you like.
