SLOW COOKER TUSCAN CHICKEN PASTA
Serves 8-10
Cooking time: 4 hours on high, 8 hours on low.
Ingredients:
1.3kg chicken thighs, whole
1 teaspoon sea salt flakes
1 teaspoon cracked black pepper
2 teaspoons paprika
1 large brown onion, sliced
3 garlic cloves, finely chopped
400g tinned tomatoes
1/2 cup sun dried tomatoes
1/2 cup chicken stock
250g jarred artichokes, drained
1/2 cup cream
1-2 cups grated parmesan cheese
300g short form pasta, we used penne
Fresh parsley or basil for serving
Method:
To the slow cooker: Add chicken, salt, pepper, paprika, onion, garlic, sun dried tomatoes, tinned tomatoes, artichokes, chicken stock. Stir well to combine. Place the lid on and cook for 4 hours on high or 8 hours on low.
Remove the lid and shred the chicken with two forks and stir through the sauce. Then add the cooked pasta, stir through. Then add the cream and parmesan. Season well if needed. Add your basil or parsley and mix well.
