Slow Cooker Tuscan Chicken Pasta
Cooking time: 4 hours on high, 8 hours on low.
Ingredients
- 1.3 kg chicken thighs whole
- 1 teaspoon sea salt
- 1 teaspoon cracked black pepper
- 2 teaspoons paprika
- 1 brown onion large, sliced
- 3 cloves garlic finely chopped
- 1/2 cup sun-dried tomatoes
- 400 g canned diced tomatoes
- 250 g jarred artichokes drained
- 1/2 cup chicken stock
- 300 g cooked pasta short form, we used penne
- 1/2 cup thickened cream
- 1–2 cups parmesan cheese grated
- parsley or basil, for serving
Instructions
- To the slow cooker, add the chicken, salt, pepper, paprika, onion, garlic, sun-dried tomatoes, canned tomatoes, artichokes and chicken stock. Stir well to combine. Place the lid on and cook for 4 hours on high or 8 hours on low.
- Remove the lid, shred the chicken with two forks and stir through the sauce. Then stir through the cooked pasta, cream and parmesan. Season if needed. Add the parsley or basil and mix well.
