Slow Cooker Lamb Rogan Josh
Cooking time: 3 hours on high or 7 hours on low
Ingredients
- 1 brown onion finely chopped
- 3 cloves garlic finely chopped
- 3 cm ginger piece finely chopped
- 1 kg lamb leg diced
- 2 tablespoons tomato paste
- 3 tablespoons rogan josh curry paste
- 400 g canned diced tomatoes
- 1 chicken stock cube or gel
- 1 cup water
- 2 cups pumpkin chopped
- 1 zucchini large, chopped into thick rounds
To Serve
- rice
- greek yoghurt
- coriander leaves
Instructions
- To the slow cooker, add the onion, garlic, ginger, lamb pieces, tomato paste, curry paste, tinned tomatoes, chicken stock and water. Stir well to combine. Place the lid on and cook for 3 hours on high or 7 hours on low.
- Add the pumpkin and zucchini to the curry and stir through. Place the lid on and cook for another 1 hour on high or 2 hours on low.
- Serve the curry on rice, top with a dollop of greek yoghurt and fresh coriander.
