SLOW COOKER LAMB ROGAN JOSH
Serves 4-6
Cooking time: 3 hours on high or 7 hours on low
Ingredients:
1 brown onion, finely chopped
3 garlic cloves, finely chopped
3cm piece ginger, finely chopped
1kg lamb leg, diced
2 tablespoons tomato paste
3 tablespoons rogan josh curry paste
400g tinned tomatoes
1 chicken stock cube or gel and 1 cup water
2 cups pumpkin, chopped
1 large zucchini, chopped into thick rounds
Serve with rice, coriander and greek yogurt
Method:
To the slow cooker: add onion, garlic, ginger, lamb pieces, tomato paste, curry paste, tinned tomatoes, chicken stock. Stir well to combine. Place the lid on and cook for 3 hours on high or 7 hours on low. Then add pumpkin and zucchini to the curry and stir through.
Place the lid on and cook for another 1 hour on high or 2 hours on low.
Serve curry on rice, top with a dollop of greek yoghurt and fresh coriander.
