SLOW COOKER LAMB ROGAN JOSH

Serves 4-6

Cooking time: 3 hours on high or 7 hours on low

Ingredients:

  • 1 brown onion, finely chopped 

  • 3 garlic cloves, finely chopped 

  • 3cm piece ginger, finely chopped 

  • 1kg lamb leg, diced

  • 2 tablespoons tomato paste 

  • 3 tablespoons rogan josh curry paste

  • 400g tinned tomatoes 

  • 1 chicken stock cube or gel and 1 cup water 

  • 2 cups pumpkin, chopped 

  • 1 large zucchini, chopped into thick rounds 

Serve with rice, coriander and greek yogurt 

Method: 

  1. To the slow cooker: add onion, garlic, ginger, lamb pieces, tomato paste, curry paste, tinned tomatoes, chicken stock. Stir well to combine. Place the lid on and cook for 3 hours on high or 7 hours on low. Then add pumpkin and zucchini to the curry and stir through. 


  2. Place the lid on and cook for another 1 hour on high or 2 hours on low.


  3. Serve curry on rice, top with a dollop of greek yoghurt and fresh coriander.
