Slow Cooker Lamb Rogan Josh

Ingredients
 
 

  • 1 brown onion finely chopped
  • 3 cloves garlic finely chopped
  • 3 cm ginger piece, finely chopped
  • 1 kg lamb leg diced
  • 2 tablespoons tomato paste
  • 3 tablespoons rogan josh curry paste
  • 400 g canned diced tomatoes
  • 1 chicken stock cube or gel
  • 1 cup water
  • 2 cups pumpkin chopped
  • 1 green zucchini large, chopped into thick rounds

serve with:

  • rice
  • coriander
  • greek yoghurt

Instructions
 

Method:

  • To the slow cooker: add onion, garlic, ginger, lamb pieces, tomato paste, curry paste, tinned tomatoes, chicken stock. Stir well to combine. Place the lid on and cook for 3 hours on high or 7 hours on low. Then add pumpkin and zucchini to the curry and stir through.
  • Place the lid on and cook for another 1 hour on high or 2 hours on low.
  • Serve curry on rice, top with a dollop of greek yoghurt and fresh coriander.
