SLOW COOKER ITALIAN LAMB CASSEROLE
Serves 6
Ingredients:
1 brown onion, sliced
3 Garlic cloves, finely chopped
3 Small potatoes, cut into wedges
3 Celery ribs, chopped
2 carrots cut into rounds
2 parsnips, chopped
1kg lamb leg, diced
1-2 tablespoon olive oil (brown/seared lamb for 3 mins)
3 tablespoons tomato paste
400g canned diced tomatoes
2 cups beef or chicken stock
2 tablespoons fresh thyme
Fresh parsley to serve
Method:
Brown the diced lamb in olive oil in a frying pan over medium-high heat for about 3 minutes.
To the slow cooker add: onion, garlic, potatoes, celery, carrots, parsnips, browned lamb, tomato paste, diced tomatoes, thyme and stock. Give everything a good mix in the slow cooker.
Cover and cook on low for 6-8 hours or on high for 4 hours, until the lamb is tender and the veggies are cooked through.
Once done, garnish with fresh parsley before serving.
