Slow Cooker Italian Lamb Casserole

Ingredients
 
 

  • 1–2 tablespoons extra virgin olive oil
  • 1 kg lamb leg diced
  • 1 brown onion sliced
  • 3 cloves garlic finely chopped
  • 3 potatoes small, cut into wedges
  • 3 celery sticks chopped
  • 2 carrots cut into rounds
  • 2 parsnips chopped
  • 3 tablespoons tomato paste
  • 400 g canned diced tomatoes
  • 2 cups chicken stock or beef stock
  • 2 tablespoons thyme leaves
  • parsley leaves to serve

Instructions
 

  • Heat the olive oil in a large frying pan over medium–high heat. Add the diced lamb and cook for about 3 minutes, until browned.
  • To the slow cooker, add the lamb, onion, garlic, potato, celery, carrot, parsnip, tomato paste, diced tomatoes, stock and thyme. Give everything a good stir.
  • Cover and cook on low for 6–8 hours or on high for 4 hours, until the lamb is tender and the veggies are cooked through.
  • Once done, garnish with parsley leaves before serving.
