SLOW COOKER ITALIAN LAMB CASSEROLE

Serves 6

Ingredients:

  • 1 brown onion, sliced 

  • 3 Garlic cloves, finely chopped 

  • 3 Small potatoes, cut into wedges 

  • 3 Celery ribs, chopped 

  • 2 carrots cut into rounds 

  • 2 parsnips, chopped 

  • 1kg lamb leg, diced 

  • 1-2 tablespoon olive oil (brown/seared lamb for 3 mins)

  • 3 tablespoons tomato paste

  • 400g canned diced tomatoes 

  • 2 cups beef or chicken stock 

  • 2 tablespoons fresh thyme 

  • Fresh parsley to serve  

Method:

  1. Brown the diced lamb in olive oil in a frying pan over medium-high heat for about 3 minutes.

  2. To the slow cooker add: onion, garlic, potatoes, celery, carrots, parsnips, browned lamb, tomato paste, diced tomatoes, thyme and stock. Give everything a good mix in the slow cooker.

  3. Cover and cook on low for 6-8 hours or on high for 4 hours, until the lamb is tender and the veggies are cooked through.

  4. Once done, garnish with fresh parsley before serving.
