Slow Cooker Italian Lamb Casserole
Ingredients
- 1 brown onion sliced
- 3 cloves garlic finely chopped
- 3 potato small, cut into wedges
- 3 celery sticks chopped
- 2 carrots cut into rounds
- 2 parsnip chopped
- 1 kg lamb leg diced
- 1-2 tablespoons olive oil brown/seared lamb for 3 mins
- 3 tablespoons tomato paste
- 400 g canned whole tomatoes diced
- 2 cups chicken stock or beef stock
- 2 tablespoons thyme fresh
- parsley to serve, fresh
Instructions
- Brown the diced lamb in olive oil in a frying pan over medium-high heat for about 3 minutes.
- To the slow cooker add: onion, garlic, potatoes, celery, carrots, parsnips, browned lamb, tomato paste, diced tomatoes, thyme and stock. Give everything a good mix in the slow cooker.
- Cover and cook on low for 6-8 hours or on high for 4 hours, until the lamb is tender and the veggies are cooked through.
- Once done, garnish with fresh parsley before serving.
