Slow Cooker Italian Lamb Casserole
Ingredients
- 1–2 tablespoons extra virgin olive oil
- 1 kg lamb leg diced
- 1 brown onion sliced
- 3 cloves garlic finely chopped
- 3 potatoes small, cut into wedges
- 3 celery sticks chopped
- 2 carrots cut into rounds
- 2 parsnips chopped
- 3 tablespoons tomato paste
- 400 g canned diced tomatoes
- 2 cups chicken stock or beef stock
- 2 tablespoons thyme leaves
- parsley leaves to serve
Instructions
- Heat the olive oil in a large frying pan over medium–high heat. Add the diced lamb and cook for about 3 minutes, until browned.
- To the slow cooker, add the lamb, onion, garlic, potato, celery, carrot, parsnip, tomato paste, diced tomatoes, stock and thyme. Give everything a good stir.
- Cover and cook on low for 6–8 hours or on high for 4 hours, until the lamb is tender and the veggies are cooked through.
- Once done, garnish with parsley leaves before serving.
