Slow Cooker Italian Lamb Casserole

Ingredients
 
 

  • 1 brown onion sliced
  • 3 cloves garlic finely chopped
  • 3 potato small, cut into wedges
  • 3 celery sticks chopped
  • 2 carrots cut into rounds
  • 2 parsnip chopped
  • 1 kg lamb leg diced
  • 1-2 tablespoons olive oil brown/seared lamb for 3 mins
  • 3 tablespoons tomato paste
  • 400 g canned whole tomatoes diced
  • 2 cups chicken stock or beef stock
  • 2 tablespoons thyme fresh
  • parsley to serve, fresh

Instructions
 

  • Brown the diced lamb in olive oil in a frying pan over medium-high heat for about 3 minutes.
  • To the slow cooker add: onion, garlic, potatoes, celery, carrots, parsnips, browned lamb, tomato paste, diced tomatoes, thyme and stock. Give everything a good mix in the slow cooker.
  • Cover and cook on low for 6-8 hours or on high for 4 hours, until the lamb is tender and the veggies are cooked through.
  • Once done, garnish with fresh parsley before serving.
