Heat the olive oil in a large frying pan over medium–high heat. Add the diced lamb and cook for about 3 minutes, until browned.
1–2 tablespoons extra virgin olive oil, 1 kg lamb leg
To the slow cooker, add the lamb, onion, garlic, potato, celery, carrot, parsnip, tomato paste, diced tomatoes, stock and thyme. Give everything a good stir.

Cover and cook on low for 6–8 hours or on high for 4 hours, until the lamb is tender and the veggies are cooked through.
