One Pan Chicken, Mushroom & Greens

This is the ultimate quick, healthy dinner and uses only one pan. With under 10 ingredients, it can be made quickly when youโ€™re really short on time. This is the perfect dish for me after I have given my two girls a separate dinner, as I canโ€™t be bothered making something that is too complicated or that will turn my kitchen into a bombsite. Although itโ€™s a flash in a pan, it still has delicious flavours.

Ingredients
  

  • 2 tablespoons extra virgin olive oil
  • 2 chicken breasts about 175 g each
  • 1 1/2 cups button mushrooms sliced
  • 1/2 bunch silverbeet or kale or spinach, torn
  • 1 bunch asparagus or broccolini, cut in half
  • 2 cloves garlic chopped
  • 1/2 bunch lemon thyme leaves picked
  • 1 lemon juice squeezed
  • sea salt & cracked black pepper

Instructions
 

  • Heat a frying pan over medium heat. Add 1 tablespoon of the olive oil and the chicken breasts. Cook on each side for about 3โ€“4 minutes until cooked through. Remove from the pan and cover with foil to keep warm.

  • Add the remaining tablespoon of olive oil to the pan if needed, along with the mushrooms. Sautรฉ the mushrooms until browned, about 3 minutes. At this point, add the silverbeet and asparagus. Sautรฉ for about 2 minutes on high. Then add the garlic and thyme and mix everything together. Stir through the lemon juice.

  • To serve: Place the cooked chicken breasts onto the greens and top with the mushrooms. Season well with salt and pepper.
