One Pan Chicken, Mushroom & Greens
This is the ultimate quick, healthy dinner and uses only one pan. With under 10 ingredients, it can be made quickly when you’re really short of time. This is the perfect dish for me after I have given my two girls a separate dinner, as I can’t be bothered making something too complicated or a recipe that will turn my kitchen into a bombsite. Although it’s a flash in a pan, it still has simple and delicious flavours. Prep time: 10 mins Cook time: 15 mins
Ingredients
- 2 chicken breasts (about 175 grams)
- 1.5 cups mushrooms button sliced
- 1/2 bunch silverbeet or kale or spinach, torn
- 1 bunch asparagus or broccolini, cut in half
- 2 cloves garlic chopped
- 1 lemon juice squeezed
- 1/2 bunch lemon thyme
- olive oil
- sea salt
- cracked black pepper
Instructions
Method:
- Heat a frypan on medium heat. Add 1 tablespoon of olive oil and the chicken breasts. Cook on each side for approx. 3-4 mins until cooked through. Take out of the pan and cover with foil to keep warm.
- Add a little more olive oil to the pan if needed and add the mushrooms. Sautee the mushrooms until browned, about 3 mins. At this point, add the silverbeet, kale or spinach (whatever you’re using). Then add the asparagus. Sautee these for about 2 mins on high. Then add the garlic and thyme and mix them all together. Add the lemon juice.
- To serve: Place the cooked chicken breasts onto the greens and top with the mushrooms. Season well with salt and pepper.
