MY CHEESY, AVOCADO & CHICKEN TURKISH SANDWICH

Serves 1

Ingredients:

  • 1 turkish roll, cut in half

  • 4 slices of Monterey Jack cheese

  • 1 chicken breast (from a roasted chook - store bought)

  • 1 tbs mayonnaise

  • Salt & Pepper

  • 1/2 avocado, mashed

  • Handful spinach

Method:

  1. Cut your Turkish roll in half and toast in the toaster or grill for 5 mins.

  2. Make a quick chicken mix by shredding you chicken meat, add the mayonnaise and season really well.

  3. Onto your Turkish bread, layer two cheese slices, spinach, chicken mix, mashed avocado and finish with another two pieces of cheese. Season well.

  4. Toast in your toastie machine until it’s heated through and the cheese is oozing out. You can also heat it in the grill section of the oven (just take off the lid) and grill for 5-7 mins until the cheese is oozing. YUM!!!!

You can buy Monterey Jack cheese slices from the supermarket.
