My Cheesy Avocado & Chicken Turkish Sandwich

- 1 turkish roll cut in half
- 1 chicken breast from a store bought roasted chook
- 1 tablespoon mayonnaise
- sea salt & cracked black pepper
- 4 slices monterey jack cheese see notes
- handful baby spinach
- 1/2 avocado mashed
Instructions
- Toast your roll in the toaster or under the grill for 5 minutes.
- Make a quick chicken mix by shredding you chicken meat, stirring through the mayonnaise and seasoning really well.1 chicken breast, 1 tablespoon mayonnaise, sea salt & cracked black pepper
- Layer two cheese slices onto the base of your roll. Top with the spinach, chicken mix, mashed avocado, the remaining cheese slices and the top of the roll. Season well.4 slices monterey jack cheese, handful baby spinach, 1 chicken breast, 1/2 avocado
- Toast in a sandwich press until it’s heated through and the cheese is oozing out. You can also heat it under the oven grill for 5–7 minutes (just take off the top part of the roll). YUM!4 slices monterey jack cheese
