Toast your roll in the toaster or under the grill for 5 minutes.
Make a quick chicken mix by shredding you chicken meat, stirring through the mayonnaise and seasoning really well.
1 chicken breast, 1 tablespoon mayonnaise, sea salt & cracked black pepper
Layer two cheese slices onto the base of your roll. Top with the spinach, chicken mix, mashed avocado, the remaining cheese slices and the top of the roll. Season well.
Toast in a sandwich press until it’s heated through and the cheese is oozing out. You can also heat it under the oven grill for 5–7 minutes (just take off the top part of the roll). YUM!
