Mediterranean Chicken Pasta Salad

- 300 g cooked pasta of choice
- 2 cups rocket or spinach
- 2 chicken breasts cooked, chopped
- 1 cucumber diced
- 1 cup cherry tomatoes halved
- 1 green capsicum diced
- 1 red onion thinly sliced
- 2 spring onions sliced
- 400 g canned chickpeas drained
- ½ cup kalamata olives
- 1 cup basil fresh, or mint
- 60 g feta crumbled
- Extra virgin olive oil for drizzling
- 1 lemon juiced
- 2 tablespoons basil pesto store bought or homemade
- 3 tablespoons Greek yoghurt
Instructions
- In a large bowl, combine cooked pasta, rocket or spinach, chicken, cucumber, cherry tomatoes, capsicum, red onion, spring onion, chickpeas, olives, and basil or mint. Toss well.
