HOLY MOLY GUACAMOLE

Serves 6 (as a starter)

Ingredients:

  • 4 large avocados

  • 1 cup cherry tomatoes, halved

  • 2 tbsp sliced jalapeños, finely chopped

  • 1 small red onion, very finely diced

  • 1/2 cup coriander leaves, roughly chopped

  • 1 tsp sea salt flakes

  • 1 large lime, juice squeezed

Method:

  1. Spoon out the flesh of the avocados and place them in a medium-sized bowl. Using a fork, break up the avocado until it’s still chunky, not too pureed. Add the cherry tomatoes, half the chopped jalapenos, red onion and jalapenos. Gently mix the ingredients together. Add the sea salt and lime juice and gently mix.

  2. Spoon the guacamole into a clean bowl, and pile it nice and high (don’t push it down). Then top with the other half of the chopped jalapenos and garnish with some coriander leaves and some lime wedges.
