Scoop out the flesh of the avocados and place in a bowl. Using a fork, break up the avocado until it’s mashed but still chunky. Add the cherry tomatoes, red onion, coriander and half the jalapeño. Gently mix the ingredients together. Add the sea salt and lime juice and gently mix again.

Spoon the guacamole into a clean bowl, piling it nice and high (don’t push it down). Then top with the other half of the chopped jalapeño and garnish with some coriander leaves and lime wedges.
