EGG, BACON & CHERRY TOMATO EGG TORTILLA QUICHE

Serves 2

Ingredients:

  • 1 large tortilla 

  • 3-4 eggs, beaten 

  • 1/2 cup cottage cheese 

  • 1/2 cup cherry toms, halved

  • 1/2 cup spinach, chopped  

  • 1/2 cup bacon, chopped 

  • 1/2 cup grated mozzarella 

  • Pinch of salt and pepper 

Method:

  1. Preheat oven to 175 degrees celsius (fan forced)


  2. Using a 20cm shallow oven/cake tin, place the tortilla into the pan and gently push down to create a case. 


  3. Add the spinach, bacon pieces and cherry tomatoes to the cake tin. Combine the eggs, salt, pepper and cottage cheese and then pour into the tin (gently bang the tin on a surface to allow the egg to spread). Top with grated cheese and season well. 


  4. Bake for 30 minutes. Remove, cut and enjoy.
