Bacon & Cherry Tomato Egg Tortilla Quiche

Ingredients
  

  • 1 tortilla large
  • 1/2 cup baby spinach chopped
  • 1/2 cup bacon chopped
  • 1/2 cup cherry tomatoes halved
  • 3–4 eggs whisked
  • 1/2 cup cottage cheese
  • sea salt & cracked black pepper
  • 1/2 cup mozzarella cheese grated

Instructions
 

  • Preheat the oven to 195°C conventional (175°C fan-forced).
  • Using a 20 cm shallow oven or cake tin, place the tortilla into the tin and gently push down to create a case.

  • Add the spinach, bacon and cherry tomatoes to the tin. Combine the whisked egg, cottage cheese, salt and pepper in a bowl, then pour into the tin (gently bang the tin on a surface to allow the egg to spread). Top with the grated cheese and season well.
    1/2 cup baby spinach, 1/2 cup bacon, 1/2 cup cherry tomatoes, 3–4 eggs, 1/2 cup cottage cheese, sea salt & cracked black pepper, 1/2 cup mozzarella cheese
  • Bake for 30 minutes. Remove, cut and enjoy.
