Bacon & Cherry Tomato Egg Tortilla Quiche
Ingredients
- 1 tortilla large
- 1/2 cup spinach chopped
- 1/2 cup bacon chopped
- 1/2 cup cherry tomatoes halved
- 3–4 eggs whisked
- 1/2 cup cottage cheese
- sea salt & black pepper pinch each
- 1/2 cup mozzarella cheese grated
Instructions
- Preheat the oven to 175°C (fan forced).
- Using a 20 cm shallow oven or cake tin, place the tortilla into the tin and gently push down to create a case.
- Add the spinach, bacon and cherry tomatoes to the tin. Combine the whisked egg, cottage cheese, salt and pepper in a bowl, then pour into the tin (gently bang the tin on a surface to allow the egg to spread). Top with the grated cheese and season well.
- Bake for 30 minutes. Remove, cut and enjoy.
