Bacon & Cherry Tomato Egg Tortilla Quiche
Ingredients
- 1 tortilla large
- 3-4 eggs beaten
- 1/2 cup cottage cheese
- 1/2 cup cherry toms halved
- 1/2 cup spinach chopped
- 1/2 cup bacon chopped
- 1/2 cup mozzarella cheese grated
- salt pinch
- pepper pinch
Instructions
- Preheat oven to 175 degrees celsius (fan forced)
- Using a 20cm shallow oven/cake tin, place the tortilla into the pan and gently push down to create a case.
- Add the spinach, bacon pieces and cherry tomatoes to the cake tin. Combine the eggs, salt, pepper and cottage cheese and then pour into the tin (gently bang the tin on a surface to allow the egg to spread). Top with grated cheese and season well.
