Crostini With Fresh Mozzarella, Prosciutto & Basil
Makes 25–30 crostini Prep time: 20 minutes
Ingredients
- 1/2 baguette cut into about 25 thin slices
- olive oil spray or olive oil
- sea salt & cracked black pepper
- 1/4 cup caramelised onion relish good quality
- 200 g fresh mozzarella cheese halved and thinly sliced
- 100 g prosciutto very thinly sliced
- 25 basil leaves small if possible
- chilli flakes optional
- 2 tablespoons balsamic glaze
Instructions
- Preheat the oven to 180°C conventional (160°C fan-forced). Line a tray with baking paper.
- Lay the baguette slices on the tray. Use olive oil spray or a pastry brush with olive oil to spray or rub the baguette pieces with oil. Season well. Bake for about 12–15 minutes or until just turning golden. Remove and let cool.
- To assemble: Spread each crostini with caramelised onion relish, followed by mozzarella, prosciutto and a basil leaf. Sprinkle with some chilli flakes (if desired) and drizzle with balsamic glaze. Season well and serve immediately.
