CROSTINI WITH FRESH MOZZARELLA, PROSCUITTO & BASIL

Makes 25 - 30 crostini

Prep time: 20 mins

Ingredients:

  • 1/2 baguette, cut into thing slices (25 slices)

  • Olive oil spray or olive oil

  • 1 tub of La Casa Del Formaggio Mozzarella ball (200g), cut into half slices  

  • 100g of prosciutto, very thinly sliced, cut into 10cm slices

  • 1/4 cup of good quality caramelised onion relish/chutney  

  • 25 basil leaves (small if possible)

  • 2 tablespoons of balsamic glaze

  • Chilli flakes (optional)

  • Salt, Pepper

 Method:

  1. Preheat oven to 180 degrees. Cut your baguette into thin slices and lay on a oven tray lined with baking paper. Use olive oil spray or a pastry brush with olive oil and rub/spray baguette pieces with olive oil. Season well. Bake for about 12-15 mins or until just turning golden. Remove, let cool.

  2. To assemble: Spread each crostini with caramelised onion relish, followed by mozzarella, a prosciutto slice and a basil leaf. Sprinkle with some chilli flakes (optional) and a drizzle of balsamic glaze. Season well. Serve immediately.
