Crostini With Fresh Mozzarella, Proscuitto & Basil

Ingredients
 
 

  • 1/2 baguette cut into thing slices (25 slices)
  • olive oil spray or olive oil
  • 1 tub mozzarella cheese of La Casa Del Formaggio, 200g, cut into half slices
  • 100 g prosciutto very thinly sliced, cut into 10cm slices
  • 1/4 cup caramelised onion relish/chutney, good quality
  • 25 basil leaves, small if possible
  • 2 tablespoons balsamic glaze
  • chilli flakes optional
  • sea salt pepper

Instructions
 

Method:

  • Preheat oven to 180 degrees. Cut your baguette into thin slices and lay on a oven tray lined with baking paper. Use olive oil spray or a pastry brush with olive oil and rub/spray baguette pieces with olive oil. Season well. Bake for about 12-15 mins or until just turning golden. Remove, let cool.
  • To assemble: Spread each crostini with caramelised onion relish, followed by mozzarella, a prosciutto slice and a basil leaf. Sprinkle with some chilli flakes (optional) and a drizzle of balsamic glaze. Season well. Serve immediately.
