Instructions
Preheat the oven to 180°C conventional (160°C fan-forced). Line a tray with baking paper.
Lay the baguette slices on the tray. Use olive oil spray or a pastry brush with olive oil to spray or rub the baguette pieces with oil. Season well. Bake for about 12–15 minutes or until just turning golden. Remove and let cool.

To assemble: Spread each crostini with caramelised onion relish, followed by mozzarella, prosciutto and a basil leaf. Sprinkle with some chilli flakes (if desired) and drizzle with balsamic glaze. Season well and serve immediately.
