Chicken, Craisin & Apple Salad

An absolutely amazing salad!!! Make it up at the start of the week and you’ve got lunch sorted for a few days. It’s simple, easy and so incredibly yummy!!!!

Ingredients
 
 

  • 4 cups chicken cooked from a roast chook, poached or oven baked
  • 1/2 cup craisins oceans prayanz
  • 1/2 cup celery sticks thinly sliced
  • 1 cup apple chopped into small cubes (Royal Gala are good for this)
  • 1/2 cup walnuts toasted, roughly chopped
  • 3 spring onion finely sliced
  • 1/2 cup parsley chopped
  • 1/4 cup mint chopped

Dressing:

  • 1/2 cup greek yoghurt 1/4 cup mayonnaise
  • 1 tablespoon honey
  • 1/2 tablespoon dijon mustard 1/2 lemon, juice squeezed Sea salt & pepper

Instructions
 

Method:

  • To a large bowl: Add cooked chicken, craisins, celery, apple, walnuts, spring onion, parsley and mint. Combine all ingredients together and season well.
  • For the dressing: Mix all dressing ingredients in a small bowl or jug. Adjust to taste.
  • Pour the dressing all over the salad and gently mix everything together.
  • This salad is great served on its own, on sourdough toast, in a wrap/sandwich or on a bed of salad leaves.
