Chicken, Craisin & Apple Salad
An absolutely amazing salad!!! Make it up at the start of the week and you’ve got lunch sorted for a few days. It’s simple, easy and so incredibly yummy!!!!
Ingredients
- 4 cups chicken cooked from a roast chook, poached or oven baked
- 1/2 cup craisins oceans prayanz
- 1/2 cup celery sticks thinly sliced
- 1 cup apple chopped into small cubes (Royal Gala are good for this)
- 1/2 cup walnuts toasted, roughly chopped
- 3 spring onion finely sliced
- 1/2 cup parsley chopped
- 1/4 cup mint chopped
Dressing:
- 1/2 cup greek yoghurt 1/4 cup mayonnaise
- 1 tablespoon honey
- 1/2 tablespoon dijon mustard 1/2 lemon, juice squeezed Sea salt & pepper
Instructions
Method:
- To a large bowl: Add cooked chicken, craisins, celery, apple, walnuts, spring onion, parsley and mint. Combine all ingredients together and season well.
- For the dressing: Mix all dressing ingredients in a small bowl or jug. Adjust to taste.
- Pour the dressing all over the salad and gently mix everything together.
- This salad is great served on its own, on sourdough toast, in a wrap/sandwich or on a bed of salad leaves.
