CHICKEN, CRAISIN & APPLE SALAD

An absolutely amazing salad!!! Make it up at the start of the week and you’ve got lunch sorted for a few days. It’s simple, easy and so incredibly yummy!!!!

Serves 4

Ingredients:

  • 4 cups cooked chicken (from a roast chook, poached or oven baked)

  • 1/2 cup @oceansprayanz craisins

  • 1/2 cup celery, thinly sliced

  • 1 cup apple, chopped into small cubes (Royal Gala are good for this)

  • 1/2 cup toasted walnuts, roughly chopped

  • 3 spring onion, finely sliced

  • 1/2 cup parsley, chopped

  • 1/4 cup mint, chopped

  • Dressing:

  • 1/2 cup Greek yoghurt 1/4 cup mayonnaise

  • 1 tbs honey

  • 1/2 tbsp Dijon mustard 1/2 lemon, juice squeezed Sea salt & pepper

Method:

  1. To a large bowl: Add cooked chicken, craisins, celery, apple, walnuts, spring onion, parsley and mint. Combine all ingredients together and season well.

  2. For the dressing: Mix all dressing ingredients in a small bowl or jug. Adjust to taste.

  3. Pour the dressing all over the salad and gently mix everything together.

    This salad is great served on its own, on sourdough toast, in a wrap/sandwich or on a bed of salad leaves.
