An absolutely amazing salad! Make it up at the start of the week and you’ve got lunch sorted for a few days. It’s simple, easy and so incredibly yummy!
4cupscooked chickenchopped (store bought roast chook, poached or oven baked all work)
1/2cupdried cranberries
1/2cupcelery sticksthinly sliced
1cupapplechopped into small cubes (royal gala are good for this)
1/2cupwalnutstoasted, roughly chopped
3spring onionsfinely sliced
1/2cupparsley leaveschopped
1/4cupmint leaveschopped
sea salt & cracked black pepper
1/2cupgreek yoghurt
1/4cup mayonnaise
1tablespoonhoney
1/2tablespoondijon mustard
1/2lemonjuice squeezed
Instructions
Place the chicken, dried cranberries, celery, apple, walnuts, spring onion, parsley and mint in a large bowl. Combine and season well.

For the dressing: Mix all the ingredients in a small bowl or jug. Adjust seasoning to taste.
1/2 cup greek yoghurt, 1/4 cup mayonnaise, 1 tablespoon honey, 1/2 tablespoon dijon mustard, 1/2 lemon
Pour the dressing over the salad and gently mix everything together.
This salad is great served on its own, on sourdough toast, in a wrap/sandwich or on a bed of salad leaves.
