Chicken, Cranberry & Apple Salad

An absolutely amazing salad! Make it up at the start of the week and you’ve got lunch sorted for a few days. It’s simple, easy and so incredibly yummy!

Ingredients
  

  • 4 cups cooked chicken chopped (store bought roast chook, poached or oven baked all work)
  • 1/2 cup dried cranberries
  • 1/2 cup celery sticks thinly sliced
  • 1 cup apple chopped into small cubes (royal gala are good for this)
  • 1/2 cup walnuts toasted, roughly chopped
  • 3 spring onions finely sliced
  • 1/2 cup parsley leaves chopped
  • 1/4 cup mint leaves chopped
  • sea salt & cracked black pepper
  • 1/2 cup greek yoghurt
  • 1/4 cup mayonnaise
  • 1 tablespoon honey
  • 1/2 tablespoon dijon mustard
  • 1/2 lemon juice squeezed

Instructions
 

  • Place the chicken, dried cranberries, celery, apple, walnuts, spring onion, parsley and mint in a large bowl. Combine and season well.

  • For the dressing: Mix all the ingredients in a small bowl or jug. Adjust seasoning to taste.
    1/2 cup greek yoghurt, 1/4 cup mayonnaise, 1 tablespoon honey, 1/2 tablespoon dijon mustard, 1/2 lemon
  • Pour the dressing over the salad and gently mix everything together.
  • This salad is great served on its own, on sourdough toast, in a wrap/sandwich or on a bed of salad leaves.
