Cheesy Egg & Ham Pull Apart

Ingredients
  

  • 4 eggs
  • 1/4 cup milk
  • 1 cup tasty cheese grated, plus extra for topping
  • 1/2 cup baby spinach or handful parsley leaves, chopped
  • sea salt & cracked black pepper
  • 6–8 tortillas large
  • 1 1/2 cups ham shredded or sliced roughly

Instructions
 

  • Preheat the oven to 200°C conventional (180°C fan-forced).
  • In a medium bowl, whisk the eggs and milk. Add the grated cheese and spinach or parsley. Season well with salt and pepper.

  • Fold up the tortillas and place them long ways in an ovenproof tray or casserole dish.
    6–8 tortillas
  • Fill the folds of the tortillas with the ham and extra cheese, then pour over the egg mix. Pick up the dish and tilt to make sure the egg mix fills the spaces.
    1 1/2 cups ham, 1 cup tasty cheese
  • Bake in the oven for 25–30 minutes. Cut into squares and enjoy!
