CHEESY EGG & HAM PULL APART

Serves 4-6 

Ingredients: 

  • 6-8 white large flour tortillas 

  • 1.5 cups ham, shredded or sliced roughly 

  • 1 cup grated tasty cheese

  • 4 eggs, whisked 

  • 1/4 cup milk 

  • 1/2 cup spinach OR handful parsley, chopped 

  • Sea salt & black pepper 

  • Extra grated cheese for topping 


Method:

  1. Preheat oven to 180 degrees celsius (fan forced).


  2. In a medium bowl whisk up the eggs and milk. Then add grated cheese and parsley/spinach. Season well with salt & pepper. 


  3. Fold up tortillas long ways and place them long ways in an oven proof tray or casserole dish.


  4. Fill the folds of the tortillas with ham and extra cheese. Then pour over the egg mix. Pick up the dish and tilt to make sure the egg mix fills the spaces. 


  5. Place in the oven for 25-30 mins. Cut into squares and enjoy!
