Zucchini & Bacon Slice

Ingredients
- 2 green zucchini small/medium, grated (excess juice squeezed)
- 5 rasher bacon diced
- 1 brown onion diced
- 1 cup tasty cheese grated
- 5 eggs whisked (large)
- 1 cup self raising flour
- 1/4 cup vegetable oil OR light extra virgin olive oil
- sea salt
- cracked black pepper
Instructions
- Preheat oven to 180 degrees Celsius.
- In a large bowl, add eggs, SR flour, grated zucchini, bacon, onion, oil, grated cheese and season well. Stir to combine all ingredients.
- Pour into a lined cake or lamington tin (approx. 15cm x 23cm) and flatten down with a spoon or spatula.
- Bake in the oven for approx 35-40 mins or until golden on top and cooked throughout.
