Ingredients
 
 

  • 2 green zucchini small/medium, grated (excess juice squeezed)
  • 5 rasher bacon diced
  • 1 brown onion diced
  • 1 cup tasty cheese grated
  • 5 eggs whisked (large)
  • 1 cup self raising flour
  • 1/4 cup vegetable oil OR light extra virgin olive oil
  • sea salt
  • cracked black pepper

Instructions
 

  • Preheat oven to 180 degrees Celsius.
  • In a large bowl, add eggs, SR flour, grated zucchini, bacon, onion, oil, grated cheese and season well. Stir to combine all ingredients.
  • Pour into a lined cake or lamington tin (approx. 15cm x 23cm) and flatten down with a spoon or spatula.
  • Bake in the oven for approx 35-40 mins or until golden on top and cooked throughout.
