Zucchini & Bacon Slice

Ingredients
  

  • 5 eggs large, whisked
  • 1 cup self-raising flour
  • 2 zucchini small–medium, grated (excess juice squeezed)
  • 5 bacon rashers diced
  • 1 brown onion diced
  • 1/4 cup vegetable oil or light olive oil
  • 1 cup tasty cheese grated
  • sea salt & cracked black pepper

Instructions
 

  • Preheat the oven to 180°C conventional (160°C fan-forced). Line a cake or lamington tin (about 23 cm x 15 cm) with baking paper.
  • In a large bowl, place the eggs, self-raising flour, zucchini, bacon rashers, brown onion, vegetable oil and grated tasty cheese. Season well and stir to combine.

  • Pour into the tin and flatten down with a spoon or spatula.
  • Bake for about 35–40 minutes or until golden on top and cooked throughout.
