Satay Chicken With Broccoli, Green Beans & Rice

Ingredients
 
 

  • 1 tablespoon olive oil
  • 600 g chicken breast or tenderloin, cut into 5 cm pieces
  • 250 ml satay sauce (AYAM)
  • 250 ml coconut cream (AYAM) , you can use light if you prefer
  • 2 cups frozen vegetables I like broccoli & green beans
  • 1 tablespoon fish sauce
  • 1/2 teaspoon caster sugar (optional)
  • 1/2 lime juice squeezed

To serve:

  • 1/2 cup peanuts roasted, chopped
  • 2 spring onion chopped finely on the diagonal
  • chilli flakes (optional)
  • lime fresh
  • white rice or brown

Instructions
 

Method:

  • Cut chicken into pieces.
  • Heat a large fry pan on medium/high heat and add the olive oil. Add you chicken pieces and sear on both sides for 1-2 minutes, you told browned.
  • Add the satay sauce and mix for 2-3 mins until fragrant. Then add coconut cream to the dish. Cook, while stirring for 3-4 mins. Add frozen veggies and stir for 5 mins until the veggies are warmed through. Add the fish sauce and lime juice.
  • Add rice to the serving bowls, top with the satay chicken. Sprinkle with some fresh spring onion, chopped peanuts, chilli flakes and fresh lime.

Notes

use any frozen veggies you like for this!
