Satay Chicken With Broccoli, Green Beans & Rice

- 1 tablespoon olive oil
- 600 g chicken breasts or tenderloin, cut into 5 cm pieces
- 1 cup satay sauce
- 1 cup canned coconut cream use light if you prefer
- 2 cups frozen vegetables I like broccoli & green beans
- 1 tablespoon fish sauce
- 1/2 teaspoon caster sugar optional
- 1/2 lime juice squeezed
- white or brown rice
- 1/2 cup peanuts roasted, chopped
- 2 spring onions chopped finely on the diagonal
- dried chilli flakes optional
- lime wedges
Instructions
- Heat a large frying pan over medium–high heat and add the olive oil. Add the chicken pieces and sear on each side for 1–2 minutes until browned.1 tablespoon olive oil, 600 g chicken breasts
- Add the satay sauce to the pan and mix for 2–3 minutes until fragrant. Then add the coconut cream and cook, stirring, for 3–4 minutes. Add the frozen veggies and stir for 5 minutes until warmed through.
