QUICK, EASY & HEALTHY CHICKPEA & AVOCADO SALAD

Throw this together in under 10 minutes. Super simple and wholesome for your busy week.

Serves 2

Ingredients:

  • 440g can of chickpeas, rinsed and drained.

  • 1 large avocado, chopped

  • 1/3 cup coriander, chopped

  • 1/3 cup toasted almonds, chopped

  • 1/4 cup feta cheese or goats cheese

  • 2 tablespoons spring onion, finely chopped (optional)

  • Juice of 1 lime

  • 2 tbsp extra Virgin olive oil

  • Sea salt & black pepper

Method:

  1. Mix all ingredients together in a bowl. Drizzle over olive oil and squeeze lime juice over the salad, toss gently. Season well with salt and pepper.

If you want more substance, feel free to serve on wholemeal toast or rice crackers/corn thins.
