  • 1/2 cup snow peas, sliced

  • 2 cloves garlic, finely chopped

  • 4cm piece ginger, finely chopped

  • 3 spring onion, finely sliced

  • 300g mince of choice (I used beef, but you can use pork or chicken)

  • 2 carrots, julienned sliced or grated

  • 1/4 cup soy sauce

  • 1 tsp corn flour

  • 1 tsp honey or maple syrup

  • 1 tsp sesame oil

  • 2 tbsp sesame seeds

Method:

  1. Place rice, water and salt in a medium saucepan and bring to a boil. Lower the heat, cover, and simmer for 15 minutes.

  2. For the sauce: Mix together the soy sauce, corn flour, honey or maple syrup and sesame oil. Set aside.

  3. Place a large frying pan onto medium heat and add half the olive oil. Add the broccoli and snow peas and cook, stirring for approx. 2 mins. Remove the veggies and set them aside.

  4. Add the remaining olive oil to the pan. Then add the garlic and ginger, stirring for 2 mins. Add the spring onion and stir through. Add the mince and break it up with a wooden spoon, cooking for 5-7 minutes. Add in the sauce and stir through for 1 minute. Add the pre-cooked green vegetables and the fresh carrot to the pan and stir through for 1 minute. Turn off the heat. Add the sesame seeds.

  5. To serve: Add rice to bowls and top with the hot beef and vegetables. Sprinkle over some extra sesame seeds.
