QUICK, CHEAP & SUPER YUMMY ASIAN BEEF & RICE
Such a winner!!! So good for the whole family!
It’s cheap, easy and quick. You can whip this dish up in no time and it’s delicious
Serves 2
Ingredients:
1 cup white or brown rice
1.5 cups water
1 tsp salt
2 tbsp extra virgin olive oil
1 cup broccoli florets
1/2 cup snow peas, sliced
2 cloves garlic, finely chopped
4cm piece ginger, finely chopped
3 spring onion, finely sliced
300g mince of choice (I used beef, but you can use pork or chicken)
2 carrots, julienned sliced or grated
1/4 cup soy sauce
1 tsp corn flour
1 tsp honey or maple syrup
1 tsp sesame oil
2 tbsp sesame seeds
Method:
Place rice, water and salt in a medium saucepan and bring to a boil. Lower the heat, cover, and simmer for 15 minutes.
For the sauce: Mix together the soy sauce, corn flour, honey or maple syrup and sesame oil. Set aside.
Place a large frying pan onto medium heat and add half the olive oil. Add the broccoli and snow peas and cook, stirring for approx. 2 mins. Remove the veggies and set them aside.
Add the remaining olive oil to the pan. Then add the garlic and ginger, stirring for 2 mins. Add the spring onion and stir through. Add the mince and break it up with a wooden spoon, cooking for 5-7 minutes. Add in the sauce and stir through for 1 minute. Add the pre-cooked green vegetables and the fresh carrot to the pan and stir through for 1 minute. Turn off the heat. Add the sesame seeds.
To serve: Add rice to bowls and top with the hot beef and vegetables. Sprinkle over some extra sesame seeds.
