Prawn Pad Thai

Prawn Pad Thai

You can whip this dish up in 15 minutes and it’s AMAZING!

Ingredients
 
 

  • 400 g rice noodles
  • 2 teaspoons olive oil
  • 200 g prawns raw, peeled, tails intact
  • 1 egg lightly beaten
  • 200 g pad thai stir fry sauce
  • 1 cup bean sprouts
  • 2 spring onions roughly chopped
  • 1/2 cup snow peas sliced lengthways

Garnish

  • peanuts crushed
  • lime juice
  • red chilli sliced

Instructions
 

  • Cook the rice noodles as per packet instructions. Drain, run under cold water and set aside.
  • Heat the oil in a wok or frying pan over high heat. Add the prawns and stir fry until just cooked. Add the beaten egg to the side of the pan and scramble. Add the pad thai sauce and stir until heated through.
  • Add the noodles and stir until heated through and coated in the sauce. Add the bean sprouts, spring onion and snow peas, then toss to combine.
  • Garnish with chopped peanuts, fresh lime juice and chilli. Serve immediately.

Notes

Substitute the prawns with chicken, tofu or extra vegetables.
