PRAWN PAD THAI

Serves 4

You can whip this dish up in 15 minutes and it’s AMAZING!!!!!

Ingredients:

  • 400g Rice Noodles

  • 2 tsps olive oil

  • 200g peeled raw prawns, tails intact

  • 1 Egg, lightly beaten

  • 200g AYAM Hawker Market Pad Thai Stir Fry Sauce

  • 1 cup bean sprouts

  • 1/2 cup snow peas, sliced long ways

  • 2 spring onion, roughly chopped

Garnish:

  • Crushed peanuts, lime juice and chilli

Method:

  1. Cook rice noodles as per packet instructions. Drain, run cold water through them and set aside.

  2. Heat oil in a wok or frypan over high heat. Add prawns and stir fry until just cooked. Add beaten egg to the side of the pan and scramble. Add Pad Thai sauce and stir until heated through.

  3. Add noodles and stir until heated through and coated in sauce.

  4. Add bean sprouts, spring onion and snow peas, toss to combine.

  5. Garnish with chopped peanuts, fresh lime juice and chilli. Serve immediately.

Tip: Substitute prawns for chicken, tofu, or extra vegetables.
