Oven Baked Tomatoes

- 5 tomatoes medium, cut into wedges
- 1-2 tablespoons extra virgin olive oil
- 1 tablespoon mixed herbs dried , or any preferred herb
- 1 tablespoon brown sugar
Salt and pepper, to taste
Instructions
- Preheat the oven to 200 degrees.
- Arrange the tomato wedges on a lined baking tray.
- Drizzle with olive oil, sprinkle with herbs, brown sugar and season with salt and pepper.
- Roast for 20–25 minutes, or until softened and lightly caramelised.
- Serve warm or store in the fridge in an airtight container for up to 4 days.
Notes
Serving ideas: Stir through pasta, spoon over toast with feta, or add to salads and grain bowls.
