Oven Baked Tomatoes

Ingredients
  

  • 5 tomatoes medium, cut into wedges
  • 1-2 tablespoons extra virgin olive oil
  • 1 tablespoon mixed herbs dried , or any preferred herb
  • 1 tablespoon brown sugar

Salt and pepper, to taste

Instructions
 

  • Preheat the oven to 200 degrees.
  • Arrange the tomato wedges on a lined baking tray.
  • Drizzle with olive oil, sprinkle with herbs, brown sugar and season with salt and pepper.
  • Roast for 20–25 minutes, or until softened and lightly caramelised.
  • Serve warm or store in the fridge in an airtight container for up to 4 days.

Notes

Serving ideas: Stir through pasta, spoon over toast with feta, or add to salads and grain bowls.
