Oven Baked Tomatoes

- 5 tomatoes medium, cut into wedges
- 1-2 tablespoons extra virgin olive oil
- 1 tablespoon mixed herbs dried , or any preferred herb
- 1 tablespoon brown sugar
Salt and pepper, to taste
Preheat the oven to 200 degrees.
Arrange the tomato wedges on a lined baking tray.
Drizzle with olive oil, sprinkle with herbs, brown sugar and season with salt and pepper.
Roast for 20–25 minutes, or until softened and lightly caramelised.
Serve warm or store in the fridge in an airtight container for up to 4 days.
Serving ideas: Stir through pasta, spoon over toast with feta, or add to salads and grain bowls.
