One Dish Roasted Chicken, Cherry Tomatoes & Olives
Such a simple fuss-free dinner idea. Throw it all in the dish and get it cooking!! Flavours are great, no mess in the kitchen, it’s a real winner!!!
Ingredients
- 250 g cherry tomatoes punnet
- 1/3 cup olives any type you like
- basil leaves fresh
- 1 teaspoon garlic or 1 clove
- 1 tablespoons olive oil extra virgin
- sea salt pinch
- cracked black pepper
- 6 chicken tenderloins
- 1 tablespoon olive oil extra virgin
- 1 tablespoon lemon herb dried herbs
- 2 tablespoons panko bread crumbs
- 1/2 cup parmesan cheese grated
- 2 tablespoons parsley or basil, roughly chopped.
Instructions
Method:
- Preheat the oven to 200 degrees Celsius.
- In a small/medium roasting dish, add the cherry tomatoes, olives, basil, minced garlic, and olive oil and season really well.
- In a small bowl mix together the grated Parmesan and chopped basil or parsley.
- Lay the chicken tenderloins on top of the tomato mix. Drizzle over the olive oil. Then sprinkle over the lemon & herb seasoning, followed by the panko breadcrumbs and finish with the parmesan/basil topping.
- Roast in the oven for 20 mins. The chicken should need any longer than this (trust me)!!
- You can serve this dish with rice, pasta, cous cous, zoodles, roasted vegetables or just on its own.
