One Dish Roasted Chicken, Cherry Tomatoes & Olives

Such a simple fuss-free dinner idea. Throw it all in the dish and get it cooking! The flavours are great, and there's no mess in the kitchen – it’s a real winner!

Ingredients
  

  • 250 g cherry tomatoes
  • 1/3 cup olives pitted, any type you like
  • handful basil leaves
  • 1 teaspoon garlic crushed
  • 2 tablespoons extra virgin olive oil
  • sea salt & cracked black pepper
  • 1/2 cup parmesan cheese grated
  • 2 tablespoons parsley leaves or basil leaves, roughly chopped
  • 6 chicken tenderloins
  • 1 tablespoon lemon & herb seasoning dried
  • 2 tablespoons panko breadcrumbs

Instructions
 

  • Preheat the oven to 200°C conventional (180°C fan-forced).
  • In a medium roasting dish, place the cherry tomatoes, olives, basil, garlic and 1 tablespoon of the olive oil. Season really well.

  • In a small bowl, mix together the grated parmesan and chopped parsley or basil.
    1/2 cup parmesan cheese, 2 tablespoons parsley leaves
  • Place the chicken tenderloins on top of the tomato mix and drizzle over the remaining tablespoon of olive oil. Sprinkle over the lemon and herb seasoning, followed by the panko breadcrumbs and the parmesan and herb topping.
    6 chicken tenderloins, 2 tablespoons extra virgin olive oil, 1 tablespoon lemon & herb seasoning, 2 tablespoons panko breadcrumbs, 1/2 cup parmesan cheese, 2 tablespoons parsley leaves
  • Roast in the oven for 20 minutes. The chicken should not need any longer than this – trust me!
    6 chicken tenderloins
  • You can serve this dish with rice, pasta, couscous, zoodles, roasted vegetables or just on its own.
