HOISIN CHICKEN WITH ASAIN GREENS & BROWN RICE

Serves 2

Super fast and super tasty!!! Have this on the table in 15 minutes and it’s perfect for the whole family!

Ingredients:

  • 300g chicken thighs, fat removed and sliced into 5cm strips

  • 2 tbsp light olive oil or peanut oil

  • 2 tbsp hoisin sauce

  • 1 tbs water

  • 250g packet of brown rice & quinoa

  • 1 bunch bok choy,, leaves washed

  • 1 bunch of broccolini or 1 cup of broccoli florets

  • 1 cup snow peas, julienned

  • 2 tbsp light soy sauce

Method:

  1. Marinate the chicken pieces in the hoisin sauce.

  2. Heat a large fry pan over med/high heat. Add the oil and fry the chicken pieces in batches for 3-4 mins each side or until just cooked through. In the last minute, add the water to one side of the pan and mix with the sauce and juices. Remove and pour all the juices over the chicken.

  3. Add a little more oil to the same frying pan on high heat (you may need to quickly give the pan a wipe out of there are crispy bits). Add the greens and stir fry for 2-3 minutes. Add the soy for the last minute and mix well.

  4. To serve: add half the brown rice packet to 2 bowls. Add in the stir fried greens and top with the chicken pieces & juices. If you want to add a little more soy sauce, feel free.
