Healthy Hummus Board
It was no secret that I didn’t love the trending butter board that was going around. So I thought I’d make a healthier version using hummus.I LOVE hummus, I have it several times a week with so many different things. This is an interesting way to make an entertaining dip a bit more exciting. So easy, so fresh, it looks great and it tastes amazing!
Ingredients
- 2 cups hummus homemade or store bought
- 1 lebanese cucumber finely diced
- 1/2 cup cherry tomatoes chopped
- 2 tablespoons jarred marinated red peppers sliced into strips
- 3 radishes finely chopped
- 3 spring onions finely sliced
- 2 tablespoons kalamata olives pitted, chopped
- 2 tablespoons dill
- sea salt & cracked black pepper
- 1/2 lemon juice squeezed
Instructions
- Spread the hummus across your board (you may need to use more if using a big board).
- Sprinkle over all your chopped vegetables and herbs. Season well and squeeze over some lemon juice.
- Serve with toasted baguette, crackers or lavosh – whatever you like!
