Healthy Hummus Board
It was no secret that I didn’t love the trending butter board that was going around. So I thought I’d make a healthier version using hummus.I LOVE hummus, I have it several times a week with so many different things. This is just an interesting way to make an entertaining dip a bit more exciting!!!So easy, so fresh, it looks great and it tastes amazing!!!
Ingredients
- 2 cups hummus homemade or store-bought
- 1 lebanese cucumber finely diced
- 1/2 cup cherry tomatoes chopped
- 2 tablespoons red peppers strips, marinated
- 3 radishes finely chopped
- 3 spring onions finely sliced
- 2 tablespoons kalamata olives chopped
- 2 tablespoons dill
- lemon fresh, juice squeezed over the top
- sea salt
- cracked black pepper
Instructions
Method:
- Spread the hummus out across your board (you may need to use more if using a big board).
- Sprinkle over all your chopped vegetables on top of the hummus. Season well with sea salt and pepper. Squeeze over some fresh lemon juice.
- Serve with a toasted baguette, crackers, lavosh – whatever you like!!!!
